When acclaimed chef Anthony Demes last sculpted gourmet towers in Portland at the sophisticated Frenchie eatery Couvron, the dining culture here was still in a phase of “risotto? That’s that rice you have to stir forever right?” But after wielding his knives in the Big Apple for a while, Demes has returned to Portlandia, hoping we’re now ready for a frequently-changing, multi-morsel tasting menu concept. The exquisite food comes with an exorbitant price tag but they throw in white tablecloths, glittery chandeliers and fodder for weeks of foodie chat.
