Enter Bamboo Sushi. This sister restaurant to the original Bamboo on Southeast 28th purports to be the first certified sustainable sushi restaurant in the world. Everything served, from sake to nigiri, is selected for its environmental-friendliness as well as taste. You might pay a bit more here than your neighborhood California roll joint, but it's worth it--if you're the sort who cares about preserving the world for future generations and wants to dine well at the same time. And you are, right?

Visit this sustainable sushi superstar early to beat the hordes (happy hour is M-F 4-6pm), try the "house on fire" mackerel, and plan on double dessert, because even after you've had Bamboo's chocolate egg rolls, you're still going to want to investigate neighboring Salt & Straw's ice cream wonderland.

This über-sustainable sushi restaurant is eco-friendly from the menu to the lightbulbs to the cotton of the server’s shirts. Try the charcuterie plate with house-cured fish and tuna boudin noir and sidle up to the sushi bar to watch true culinary artists at work.

great quality sushi and friendly staff. It is a bit chilly in their so bring a sweater (they are also right next to Salt & Straw, just sayin')

Generally packed during HH but tables start to clear about a half hour before it ends and that's a great time to get in without a wait and still get in on the happy hour prices. The waitstaff was great with explaining some of the traditional dishes list on the menu and recommending a cocktail based upon your drink preference. Everything we ordered was excellent. Wanna brush up on your Japanese, head to the bathroom for a quick lesson while you "go"
