Not only to they make their own meats,
I've now seen their products in other coffee shops/venues. They're really nice and everything is top quality. If you're not vegetarian, this is the place for you. Also stylish people-watching.

The sign says MEAT.
The sign says meat, so that's what we got. My roommate ordered the salami sandwich and I got 2 orders of the pork rillette. The rillette had a great flavor and a good consistency and worked well inside the pastry. We also ordered the charcuterie plate which was also really good. I wish I could remember what all the items were but I was way too into how good everything tasted for my brain to work.

One Bad Egg.
I have since received an email from the proprietors who assure me the person below does not work for them. I guess she was just an obnoxious drunk who in some way felt a part of their win. She definitely ruined my evening and the jury is still out on the state of my dress.
I liked Olympic Provisions when I visited. Unfortunately, my favorable opinion changed when I went to Cochon 555. The food was good and they made good use of the pig, but the employees showed a true lack of grace when they won. One woman in particular shouted and jumped up and down spilling red wine all over my dress. Now I know she was excited so I tried to remain calm and told her she should be more careful. She told me to " get over it it's a festival and besides... I look like this (gesturing at her overall physique)" She was in no way apologetic for her behavior and that has soured me on this place. Any establishment that hires people with such poor manners should be concerned because I am sure this will carry over to their restaurant.
