Sake

Sake Vocabulary‍

Styles of Saké

Futsu–Shu Table saké. The futsu–shu at zilla is well crafted. It contains more brewer’s alcohol than honjozo style, but still has a respected polishing ratio.

Honjozo Saké that has a small amount of brewers alcohol (not more than 20% of the total batch volume) added to the fermentation – enhancing the flavor & aroma – not designed to add to the alcohol level.

Junmai Any saké that has been brewed w/ rice, water, koji & yeast only. No brewers alcohol.

Ginjo Any saké w/ a polish ratio of 50% – 60%. 60% polish means 60% remains – 40% is removed. The is premium saké – generally designed to be served chilled.

Daiginjo Any saké w/ a polish ratio of 50% or more removed. 35% polish = 65% of the grain is removed before fermentation. This creates a very special delicate & elegant style of saké. Only served chilled.

Nigori Cloudy – unpressed (sometimes called unfiltered) saké. This saké has rice sediment – usually sweet, creamy & tropical – very popular. Important to shake before pouring. Only served chilled.

Namazake Unpasteurized, “raw”; the enzymes are still alive. Very fresh.

Kimoto Traditional style of saké making where the batch creates it’s own natural lactic acid. Prior to the yeast addition, the yeast starter is divided up & mashed w/ a mixing pole called “yamaoroshi”. This process takes longer than modern methods & requires more hand–crafted skill.

Yamahai Traditional style similar to kimoto. The starting batch (moto or shubo) is not divided & mashed w/ a pole like kimoto, but allowed to sit for 2 weeks, creating natural lactic acid prior to the yeast addition.

Terms and Key Points

Rice Polish Ratio Saké rice has lipids, proteins & fats that can adversely affect fermentation. These need to be removed before the rice is used for brewing. The more the rice is polished, the higher quality saké being crafted. This is a very important part of saké brewing. If a saké has a 60% polish ratio, this means 40% is removed & 60% remains.

Genshu “Cask strength” or undiluted. This translates to a higher alcohol content, generally 18%-21%
